“I was raised in a small gully of Kolkata, where, just like everyone else, street food was an escape from the monotony of the family kitchen. I have never been much of a “communicator” and being somewhat of an introvert, I chose to communicate with food. I still do really.
One thing that always fascinated me about gully food is what an incredible leveller it was. The kathi roll seller near my gully set up a small stall for barely two hours every evening. He couldn’t do more. He sold out within that time, every day. And every day along with the hordes of school children, college students and office goers who were looking for a cheap tasty meal, there would be a line of shiny cars blocking the road and their owners lining up like everyone else for their roll. The pangs of taste made everyone equal. And I realized that true power lies in serving up happiness. So that’s what I did. That’s what I do.
